Beet Root Chips

There are so many options when it comes to choosing a bag of chips. Most times, the options are not going to be healthy...Here is a recipe for some super healthy chips that are oh so yummy!
 
 
First thing you will need are some beet root bulbs - choose the ones with the brightest color
 
Slice then as thinly as possible - if you have one use a mandolin slicer, the thinner the slice, the crunchier the chip
 
Once sliced, placed them in a bowl and toss with extra virgin olive oil and good quality sea salt. Coat evenly
 
Preheat your oven to 350 degrees. Coat your baking sheet generously with cooking spray. Bake for 20 minutes. When the 20 minutes is up, flip the chips over and cook for another 20 minutes. Depending on how thin the chips are you might want to shave off a few minutes of baking time. If you're not careful they will burn. Don't be alarmed they will shrink drastically in size.
 
Allow them to cool at room temperature before eating them. You can store them in a ziplock bag in a cool dry place for a few days. Enjoy~
