Pot-A-Beans

I don't know about you but I enjoy a hot bowl of beans on a crisp fall day. Nothing like a warm, creamy bean dish to really make the evening feel cozy. Here is a recipe for you from our kitchen this evening. It was yummy!!!!!
 
Pot-A-Beans
 
16oz. bag of pinto beans (or beans of your choice)
Half a yellow onion, chopped finely
1 green bell pepper, chopped
1 clove of garlic, minced
1 sweet pepper, chopped
Green pepper tobasco sauce
2tbsp Cumin powder
1tsp Paprika powder
1tsp Ancho chili powder
Pink Himalayan salt to taste (you can use sea salt or even table salt)
5 cups of water
Olive oil
 
Follow the quick soak method on the bag of beans. Before you add the water to cook them after they have soaked push the beans to one side of the pot, and heat up a little bit of olive oil. Add the spices(cumin, paprika, ancho chili) and garlic, saute until they become fragrant.
 
Once the spices and garlic are fragrant, mix with the beans. Mix until the beans become fully coated with oil, spices and garlic.
 
Add the chopped peppers and onion
 
Once your peppers and onion are mixed in add the 5 cups of water, a few dashes of the green pepper tobasco sauce, and salt to taste. Put a lid on your pot and allow the beans to cook on med-low for 2 hours.
Serve with a dollop of sour cream and avocado slices. ENJOY!
